Chili Recipe

All of us have our favorite Chili Recipe. Either those that have been passed down from family, or have been gotten from a special cookbook, or created ourselves. We think you will love this Chile Recipe.

We have lived in Arizona for over half a century and consider ourselves true Arizonans. One thing we always look forward to in the winter is a good bowl of chili. Not just any chili but one that you just can’t stop eating. As a matter of fact, every year there are always chili sampling or chili cook-offs somewhere in Tucson and you will always find us there. So, my wife and I have probably sampled a hundred different chilis and made about that many recipes. Consequently, we could never find that Chile Recipe that was just right.

It was a couple of years ago when a friend sent us their recipe. With a couple of modifications, we have come up with what we think is the world’s best chili. In fact, if you don’t like bacon, you can forget this recipe and check out our other special finds. I’m going to list the ingredients first and then, go on from there:

Chile Recipe Ingredients:

Chili Recipe
  1. 5 strips of bacon (chopped)
  2. 1 large onion diced
  3. 4 cloves garlic (minced)
  4. 1 pound ground beef
  5. 1 tbs. brown sugar
  6. 1 tbs. chili powder
  7. 2 tsp. smoked paprika (essential)
  8. 1 tsp. cumin
  9. 1 tsp. onion powder
  10. 1 tsp ground black pepper
  11. 1/2 tsp. salt
  12. 1/8 tsp. Cayenne pepper (more if you like it hot)
  13. 1 1/2 cups beef broth
  14. 15 oz can unseasoned black beans (rinse lightly and drain)
  15. 14.5 oz can diced fire-roasted tomatoes (undrained)
  16. 7 oz can fire roasted green chilis ( mild or hot)
  17. small can of tomato paste
  18. 1 tbsp Worcestershire sauce
  19. 1 tbs. butt rub ( the best is Bad Byrons) you can get it on Amazon
  20. Toppings-you can use any you prefer, such as sour cream, shredded cheddar cheese, or corn chips (we are purists and just use bread)

Ah! Now To Get To The Chili Recipe Cooking:

  1. Start by cooking the bacon until crisp over medium heat. Remove bacon and place on a paper towel. You will want to put aside all but 1 tbs of bacon grease.
  2. Add the onion, and cook for about 3 or 4 minutes until soft.
  3. Add the garlic and cook for about 30 seconds to bring out the flavor.
  4. Add the ground beef to your onions and garlic breaking it apart with your spatula as you cook it. Once the ground beef is about 50% done add in the brown sugar and the rest of the spices. ( chili powder, smoked paprika, cumin, onion powder, salt, black pepper, cayenne pepper, butt rub Mix it together well with the ground beef.
  5. Add in the remaining ingredients: Beef broth, beans, tomatoes, tomato paste, chilis, Worcestershire sauce, and your cooked bacon. Stir it all together.
  6. Reduce your heat and let it simmer uncovered for about half an hour to bring out all those special flavors. Make sure to give it a stir now and then.

Notes:

I like to make the dish in the afternoon and transfer it to a crockpot on low when finished. Furthermore, We eat it all evening and into the night. It’s hard to get enough. Also, if you use the hot green chilis you may want to be careful with the cayenne pepper. You can make this dish as hot as you like. As a family, we prefer it on the mild side.

Also, before I start I take all the powdered spices and put them in a small bowl. Makes it easier.

Wine with The Chili Recipe:

I’m sorry but I think a good bowl of chili just isn’t the same without a glass of good wine. To us wine is magic, but it has to be a wine without added chemicals. Especially arsenic, yech! which is added to most store-bought wine as a sweetener. Go here and you will see a wine club like no other. Where the wines are aged with no added chemicals. They come direct to you from Napa and Sonoma Valley.
